Carline is an uncooked pressed cheese type cheese made from pasteurized cow's milk, it is matured between 8 and 12 weeks in a natural cellar which gives its rind its gray color. The maturity of the cheese is noted by the appearance of yellow dots.It is presented in wheels of about 1.5 kg.
